My Banana Pancake Recipe
It is super quick and easy to make banana pancakes the way I do it. The mix takes me under 5 minutes even before I’ve had my coffee. The process is pretty simple and while my recipe is 4 ingredients it can be made with just 2.
Bananas and Eggs are the only ingredients this recipe doesn’t work without. Simply add 1 banana to 2 eggs and mix well. I have done it by mashing them with a fork but I tend to use an emulsion blender since its much faster and works fine for this. I’ve seen this recipe a few times in various places but I like my pancakes to be a bit fluffier than what comes with just banana and egg.
The other ingredients I add are baking soda and salt to offset some of the bananas sweetness. Without the salt I think they’re just a bit sweeter than I like my pancakes before adding any syrup. I still eat them without syrup most of the time.
The Banana Pancake Mix
- 1 large banana
- 2 eggs
- 1/8 tsp baking soda
- 1/8 tsp salt
Mixing my Paleo Banana Pancakes
This is the bit that makes me love my emulsion blender, I add everything to the large cup and blend. IT TAKES ABOUT 30 SECONDS! Once they’re mixed well I pour the mix out into my favorite nonstick pan. I used the traditional nonstick for a long time but I’ve moved on. First I tried the ceramic and those were great for a while. I began to have issues with the ceramic pans after about 9 months which isn’t a huge deal, they’re cheap enough. I decided after going through 4 or so ceramic pans to try out the hard anodized non-stick and I love it. That’s for another time though.
Cooking my Paleo Pancake Recipe
I cook my paleo pancakes just as I would any regular pancake mix. The trick is to wait until the bubbles form, and also to have the correct amount of heat as to keep them from getting too dark before ready to turn. I cook mine right below halfway on my stovetop. I’m running on electric with a bit of butter, grass-fed Kerrygold is my fav. Like I mentioned above I’m cooking in a hard anodized non stick pan.
